A wave model represents a travelling disturbance that carries energy. Amplitude is the size of an oscillation and frequency is the number of cycles per unit time. A drawn transverse wave does not always show the literal direction particles move.
For sound in matter, particles vibrate around equilibrium positions and interact with neighbours. The disturbance travels even though individual particles do not travel from source to receiver. Model choice depends on the question being asked.
